“We just started,” Owner Rodrigo Mondragon said. “It’s a brand new concept for the town. We’re doing mostly a quick take out. We might switch or change things around a little bit while we adapt and get some feedback. But we’re pretty excited about it, and hopefully we can keep up with it.”

One of the highlights of the breakfast menu is a breakfast torito.

Mondragon offered a short vocabulary lesson to explain. In Spanish, toritos means “little bul,”l while burrito means “little donkey.”

“I didn’t want to call them burritos because burritos implies ‘huge,’” he said. “You know, like a tortilla burrito? So, burrito means “little donkey” basically. Torito means “little bull.” But I just want to make it different. So people know that they’re not huge breakfast burritos, but they are breakfast tacos. Basically, just like a cool name, I guess. A catchy name.”

One of the highlights for veggie lovers on the menu is the Milpa, a spicy potato taco that can be made without cheese. Add some hot sauce for a little flair.
